Good morning friends! We all have heard breakfast is the most important meal of the day. But, there aren’t many healthy breakfast options. Especially for kids, all you see is highly processed and sugar filled cereals and muffins. Who needs all that sugar that early in the morning? That’s why I am so happy that my friends over at Nush sent over some pancake mix for the kids and I to try. Finally, a healthy keto version of an all time favorite.
The ingredients are super simple! Flaxseed, egg, coconut flour, erythritol, natural flavors, sodium bicarbonate, salt and monk fruit. That is it! They are keto friendly, paleo and gluten free. Another awesome thing is that they have different directions based on if you want to make 1, 2 or 4 pancakes.
All you need for 1 pancake is 2 TBSP mix, 2 TBSP water and 1/2 TBSP oil. Super simple and super fast to make.
How do they taste? They are delicious nice and fluffy. It is hard to find a thick fluffy pancake on keto. They taste like a regular pancake. My kids even destroyed a batch of these! We will be keeping these in our breakfast rotation!
